So, tomorrow is the first day of SPRING and there are so many exciting things just around the corner! We’re supposed to have a hard freeze tonight (there’s even a little snow in the forecast), but then the weather looks to be smooth sailing into the spring season. In the next few weeks I’m going to prepare my garden. Tomatoes. Peas. Peppers. Zucchini. Broccoli. Cucumbers. This year, I’m also really excited to plant some purslane. A common weed, purslane is one of my favorite greens. If you’ve ever tried the stuff, you know it’s amazing in salads, soups and the like. If you’ve never tried it, you need to!
I wish I had some purslane for today’s lunch. Unfortunately, it’s not ready. When it is, you’ll be the first to know!
Today, a light and simple lunch is in store. This hearty, fresh salad has all the right flavors, colors and textures to win you over in the spirit of springtime. To jazz it up a bit, I included a vibrant citrus miso dressing that’s beyond simple to prepare. I always try to keep a container of it on hand; but, it seems to disappear quicker than I can make the stuff.
